How is food cost percentage calculated?
Food cost percentage is the ingredient cost of one plate divided by its menu price. A plate that costs 4.20 to make and sells for 14 has a food cost of 30%.
How is the menu price for a target food cost worked out?
Menu price equals the plate cost divided by the target food cost. A 4.20 plate at a 28% target is 4.20 divided by 0.28: 15.
Should the price include tax?
Use the price before any sales tax or VAT, since the tax is not yours to keep. If your menu prices include tax, take it out first.
